Selection of Bigorre black pork meats: 20 month cured ham, grilled streaky bacon, terrine flavoured , chorizo and coppa (cured pork collar) 16€

Confit duck foie gras, with meadowsweet and Espelette chilli, Nérone jelly made with 6 year matured balsamic vinegar 16€
